, a nice introduction to general cooking
, a comprehensive baking book.I like them both. They are textbooks for culinary students. They explain the theory and techniques and provide a lot of useful background information. The recipes in these books are more streamlined than the typical home cooking recipes and contain less folklore. For home use you will need some practice in recipe conversion as many of the recipes yield more than 20 servings.
, beautiful photos and fantastic recipes, many of them too complicated or time consuming for home cooking.
, has some nice ideas.
, adaptations of traditional German recipes.
, a wonderful introduction to French cooking with working adaptations to American ingredients. I love the duck recipes.
, unfortunately out of print, is a very nice collection of European recipes, organized by country. Beautiful photography, but the recipes sometimes need some interpretation or adaptation.
, a very good book about Italian cooking.
, a cute little book about how to use a pressure cooker. Many recipes. The ones I tried worked. I find it very useful as a guideline for pressure cooking times.
. Very nice introduction to bread baking.
, THE book about all the science behind cooking, with in-detail explanations of how and why things work.
